Lime Popsicles
My wife said that she wanted to make lime popsicles with yogurt. First I was skeptical….then she said we were also going to use graham crumbs. I am not a fan of yogurt and had never tried lime yogurt. It didn’t take me long to get over my trepidation and I agreed to making these as long as we could post them on the interweb. This recipe makes about 12 popsicles and take about 10 minutes to prepare.
Here is what you will need.
Utensils:
- Mixing Bowl
- Mixing Spoon
- Measuring Cup
- Popsicle Molds
- Measuring Spoons
- Ladel
Ingredients:
- 2 cups (500 ml) Lime Yogurt
- 2 Tablespoons lime juice
- 1/2 cup Graham crumbs
- Measure 2 cups of lime yogurt.
2. Add 2 tablespoons of lime. I added more because I wanted it to have a little more zing.
3. Mix
4. Fill popsicle molds with yogurt and lime mixture about half way. Add a spoonful of graham crumbs.
5. Top off with graham crumbs.
6. Insert popsicle stick and freeze. The popsicles were left in the freezer for 24 hours to insure they were nice and solid.
7. The popsicles were run under warm water to help release them from the molds.
There were numerous items that had me concerned. I was fearful that the consistency would not be palatable. The graham crumbs held together nicely even though I thought they would fall apart. The results turned out favorable beyond my expectations. The popsicles had a nice flavor and the graham crumbs held together nicely.
Oh yeah…I forget to mention that they are really yummy!!!
